Getting the portions right for cooking for one is something I'm re-adjusting to, but mostly I just cook too much and end up with leftovers, and that's been convenient too for the nights when I'm not prepared to cook.
Honestly, in this era of refrigeration, microwaving, and lack of stay-at-home spouses, I'm baffled at the continued hold that "in the evening, cook then eat" has as a cultural norm. Reheating a previously cooked meal and eating that, then cooking later when you've had a chance to recover a bit from work and commute, seems to make a lot more sense to me.
